Do you ever buy those rotisserie chickens at the grocery store? I sure do, its my shortcut to fast and easy meals! If you are buying those chickens then you definitely need to make your own yummy chicken stock! Its so easy, healthy and nice to have on hand!

Ingredients
- Water
- Chicken Carcass
- Celery
- Carrots
- Onions
- Salt
- Pepper
- Optional Spices:
- Thyme
- Parsley
- Bay Leaves
Instructions
- Fill a large 5 quart pan with water
- Cut up celery, carrots and onions
- Add to water
- Add chicken carcass
- Add salt, pepper and spices
- Make sure the chicken is completely covered by the water. Bring to a boil
- Cover, let simmer on low from 2-6 hours-ish
