Your family will think you are a super chef after eating this salad! It only takes 15 minutes or less and is healthy! Fast, East, Yummy, Healthy, count me in!
This salad is a big hit whenever I take it! You can have it as a main dish or a side. Start with some beautiful greens. I like romaine the best in this salad. Cut up multiple heads so you can cut and wash all at once and have the work done for a weeks worth of lunch! Grab a rotisserie chicken, (Costco and Sams Club have the biggest and cheapest) get all the meat you can from it and chop it up to keep in a bag that you can sprinkle on your salad. Have handy:
Bag of Sliced Almonds
(secret weapon ingredient that makes all the difference!).
Do a little spritz and sprinkle of all the above ingredients and then top it with this yummy homemade dressing when you are ready to eat:
3 Tbl Sugar (I did a little white sugar, *rapadura and some stevia)
2 tsp. Salt
1/2 C Rice Vinegar
1/4 C. Oil (I like part peanut part olive oil)
2-4 Tbl Sesame Seeds
*Rapadura is a less refined sugar that has a lower glycemic index
